These decadent Ruby Red Velvet Cookies are soft, chewy, and packed with chocolatey goodness. With a vibrant red hue, they are perfect for celebrations or when you want to add a pop of color to your dessert spread.

Ingredients

Scale

  • 1 cup (120g) all-purpose flour
  • ¼ cup (27g) rye flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon (optional)
  • ½ cup (113g) unsalted butter, chilled and cubed
  • ½ cup (106g) dark brown sugar
  • ⅓ cup (75g) granulated sugar
  • 3 tablespoons Dutch processed cocoa powder
  • 1 large egg, at room temperature
  • 1 ¼ teaspoons red food coloring gel
  • 1 ¼ teaspoons vanilla extract
  • ¾ cup (120g) dark chocolate chips or a mix of ¼ cup (42.5g) semi-sweet chocolate chips and ½ cup (85g) dark chocolate chips
  • 1 tube of white cookie icing with small round tip
  • 1 tube of black cookie icing with small round tip
  • 1 tube of red cookie icing with small round tip

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, rye flour, baking soda, salt, and cinnamon (if using). Set aside.
  • In a large bowl, beat the chilled butter and both sugars (brown and granulated) until light and fluffy, about 2-3 minutes.
  • Add the cocoa powder, egg, red food coloring, and vanilla extract, mixing until well combined.
  • Slowly add the dry ingredients into the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  • Fold in the dark chocolate chips (or the combination of semi-sweet and dark chocolate chips).
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  • Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra chocolatey flavor, sprinkle additional chocolate chips on top of the cookies before baking.
  • If you prefer a brighter red color, increase the amount of food coloring gel slightly.
