- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, rye flour, baking soda, salt, and cinnamon (if using). Set aside.
- In a large bowl, beat the chilled butter and both sugars (brown and granulated) until light and fluffy, about 2-3 minutes.
- Add the cocoa powder, egg, red food coloring, and vanilla extract, mixing until well combined.
- Slowly add the dry ingredients into the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- Fold in the dark chocolate chips (or the combination of semi-sweet and dark chocolate chips).
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For an extra chocolatey flavor, sprinkle additional chocolate chips on top of the cookies before baking.
- If you prefer a brighter red color, increase the amount of food coloring gel slightly.
