Festively decorated cookies with dried cranberries and a luscious buttercream frosting, topped with sparkling cranberries.

Ingredients

Scale

Cookies

  • 1 Cup butter
  • 1 ¼ Cups granulated sugar
  • 1 egg
  • 1 Teaspoon vanilla extract
  • ½ Teaspoon almond extract
  • 1 Tablespoon lemon juice
  • 3 Cups all-purpose flour
  • ½ Teaspoon baking powder
  • ¼ Teaspoon salt
  • 1 Cup dried cranberries

Sparkling Cranberries

  • ⅓ Cup water
  • 2 ⅔ Cups granulated sugar, divided
  • 2 Cups fresh cranberries

Buttercream Frosting

  • ½ Cup butter
  • ⅓ Cup vegetable shortening
  • ½ Teaspoon vanilla extract
  • ¼ Teaspoon salt
  • ¼ Teaspoon almond extract
  • ¼ Cup heavy cream
  • 5 Cups powdered sugar

Instructions

  • Prepare the Dough: In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Add the egg, vanilla extract, almond extract, and lemon juice, mixing until combined.
  • Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until combined. Fold in the dried cranberries.
  • Chill the Dough: Cover the dough and chill it in the refrigerator for at least 30 minutes. Chilling helps the cookies hold their shape.
  • Bake the Cookies: Preheat your oven to 350°F (175°C). Roll the dough into balls and place them on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until the edges are lightly golden.
  • Make Sparkling Cranberries: In a saucepan, combine ⅓ cup of water and 1 cup of sugar. Bring to a boil, then add fresh cranberries. Simmer until they burst. Remove and roll in remaining sugar to create sparkling cranberries.
  • Prepare Buttercream Frosting: Beat together the butter, vegetable shortening, and sugar until creamy. Gradually add the heavy cream, mixing until smooth.
  • Assemble and Decorate: Once cookies cool, frost them with buttercream and top with sparkling cranberries for a festive finish. Enjoy your Sparkling Frosted Cranberry Cookies!
