Description

A hearty, flavorful hash made with crispy sweet potatoes, bacon, and vegetables, perfect for any meal of the day.


Ingredients

  • 4 slices thick-cut bacon, chopped
  • 6 scallions
  • 2 lb. sweet potato, peeled and cut into 3/4-inch pieces
  • 1 red bell pepper, roughly chopped
  • 1 1/2 tsp. kosher salt
  • 1 1/2 tsp. paprika
  • 1 tsp. cumin
  • 1/4 tsp. garlic powder

Instructions

  • Cook bacon in a skillet until crispy. Remove and set aside, leaving the grease in the pan.
  • Add sweet potatoes to the skillet, cooking until they begin to soften (about 10 minutes).
  • Stir in the bell pepper, scallions, salt, paprika, cumin, and garlic powder. Cook until all ingredients are tender.
  • Return bacon to the skillet, mixing until well combined. Serve hot.
