- 4 slices thick-cut bacon, chopped
- 6 scallions
- 2 lb. sweet potato, peeled and cut into 3/4-inch pieces
- 1 red bell pepper, roughly chopped
- 1 1/2 tsp. kosher salt
- 1 1/2 tsp. paprika
- 1 tsp. cumin
- 1/4 tsp. garlic powder
Instructions
- Cook bacon in a skillet until crispy. Remove and set aside, leaving the grease in the pan.
- Add sweet potatoes to the skillet, cooking until they begin to soften (about 10 minutes).
- Stir in the bell pepper, scallions, salt, paprika, cumin, and garlic powder. Cook until all ingredients are tender.
- Return bacon to the skillet, mixing until well combined. Serve hot.
