- 2 c. chopped dried apricots
- 1 c. chopped dried figs
- 1 c. chopped candied ginger
- 1 c. brandy, whiskey, or apple cider, plus more for brushing
- Nonstick baking spray with flour
- 3 c. all-purpose flour
- 1 Tbsp. apple or pumpkin pie spice
- 1 tsp. baking powder
- 3/4 tsp. salt
- 2 sticks unsalted butter, softened
- 1 1/2 c. light brown sugar
- 3 large eggs
- 1 Tbsp. vanilla extract
- 1 1/2 c. candied cherries
- 1 1/2 c. chopped nuts, like pecans, walnuts, or almonds
Instructions
- Soak the Fruits: In a bowl, combine raisins, apricots, figs, ginger, and your choice of brandy or cider. Let them soak for at least 24 hours to enhance the flavors.
- Prepare the Batter: Preheat the oven to 300°F. Grease your cake pan with nonstick baking spray. In a separate bowl, mix the flour, spices, baking powder, and salt. In another large bowl, cream the butter and sugar until light and fluffy, then add eggs and vanilla.
- Mix and Bake: Fold the dry ingredients into the wet mixture, then stir in the soaked fruits, candied cherries, and nuts. Pour the batter into the prepared pan and bake for about 2 hours or until a toothpick comes out clean.
