    • 125g butter, chopped
    • 125g good-quality white chocolate, chopped
    • 3/4 cup caster sugar
    • 2/3 cup milk
    • 3/4 cup plain flour
    • 1/3 cup self-raising flour
    • 1 egg, lightly beaten
  • White Christmas Topping:
    • 125g good-quality white chocolate
    • 1 cup puffed rice cereal
    • 1/3 cup shredded coconut, toasted
    • 1/2 cup pistachio nuts, toasted, chopped
    • 1/3 cup dried cranberries, chopped
    • 1/2 cup roughly-chopped white marshmallows

Instructions

  • Preheat your oven to 180°C (350°F) and grease a square cake pan.
  • Melt the butter and white chocolate together in a heatproof bowl over simmering water, stirring until smooth.
  • Remove from heat and stir in the sugar, followed by the milk and egg.
  • Sift in the plain and self-raising flours, mixing until just combined.
  • Pour the batter into the pan and bake for 25-30 minutes, or until a skewer inserted comes out clean.
  • Meanwhile, prepare the topping by melting the white chocolate, then stirring in puffed rice, coconut, pistachios, cranberries, and marshmallows.
  • Spread the topping evenly over the cake and let it set before slicing.
