- Base Ingredients:
- 125g butter, chopped
- 125g good-quality white chocolate, chopped
- 3/4 cup caster sugar
- 2/3 cup milk
- 3/4 cup plain flour
- 1/3 cup self-raising flour
- 1 egg, lightly beaten
- White Christmas Topping:
- 125g good-quality white chocolate
- 1 cup puffed rice cereal
- 1/3 cup shredded coconut, toasted
- 1/2 cup pistachio nuts, toasted, chopped
- 1/3 cup dried cranberries, chopped
- 1/2 cup roughly-chopped white marshmallows
Instructions
- Preheat your oven to 180°C (350°F) and grease a square cake pan.
- Melt the butter and white chocolate together in a heatproof bowl over simmering water, stirring until smooth.
- Remove from heat and stir in the sugar, followed by the milk and egg.
- Sift in the plain and self-raising flours, mixing until just combined.
- Pour the batter into the pan and bake for 25-30 minutes, or until a skewer inserted comes out clean.
- Meanwhile, prepare the topping by melting the white chocolate, then stirring in puffed rice, coconut, pistachios, cranberries, and marshmallows.
- Spread the topping evenly over the cake and let it set before slicing.
