A quick and delicious recipe for mini Christmas puddings using store-bought ingredients, perfect for holiday gatherings.

- 500g store-bought Christmas cake, crumbled
- 1/2 cup (125ml) milk
- 4 eggs
- 1/3 cup (85g) fruit mince
- 1/4 cup (60ml) Pedro Ximenez sherry (see note)
- Custard, to serve
- Glace cherries, to serve
Instructions
- Preheat the oven to 160°C (320°F) and grease mini pudding molds.
- In a large bowl, combine the crumbled Christmas cake, milk, eggs, fruit mince, and sherry. Mix until well blended.
- Pour the mixture into the prepared molds, filling them three-quarters full.
- Place the molds in a baking dish filled with hot water (bain-marie) and bake for 25-30 minutes until set.
- Allow to cool slightly before inverting onto a plate. Serve warm with custard and topped with glace cherries.
