- 115 g unsalted butter
- 55 g white granulated sugar
- 135 g light brown soft sugar
- 1 medium/large egg
- 1 tsp vanilla extract
- 275 g plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp sea salt
- 1 tbsp cornflour
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 150 g milk chocolate chips/chunks
- 150 g dark chocolate chips/chunks
- Buttercream:
- 75 g unsalted butter (room temp)
- 150 g icing sugar
- 1/2 tsp vanilla extract
- 1/2 tsp green food coloring

Instructions
- Preheat your oven to 180°C (350°F) and grease a large baking tray.
- In a bowl, cream together the butter, white sugar, and brown sugar until fluffy.
- Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together flour, bicarbonate of soda, sea salt, cornflour, ginger, cinnamon, and nutmeg.
- Gradually combine dry ingredients with the wet mixture. Fold in the chocolate chips.
- Spread the dough evenly on the prepared tray.
- Bake for 20 minutes or until golden brown. Allow it to cool completely.
Notes
For optimal results, allow the Giant Christmas Cookie to rest before frosting.
