Description

A deliciously soft and chewy giant cookie perfect for sharing during the holidays, adorned with colorful buttercream frosting.


Ingredients

  • Cookie Cake:
    • 115 g unsalted butter
    • 55 g white granulated sugar
    • 135 g light brown soft sugar
    • 1 medium/large egg
    • 1 tsp vanilla extract
    • 275 g plain flour
    • 1 tsp bicarbonate of soda
    • 1/2 tsp sea salt
    • 1 tbsp cornflour
    • 1 tsp ground ginger
    • 1 tsp ground cinnamon
    • 1/2 tsp ground nutmeg
    • 150 g milk chocolate chips/chunks
    • 150 g dark chocolate chips/chunks
  • Buttercream:
    • 75 g unsalted butter (room temp)
    • 150 g icing sugar
    • 1/2 tsp vanilla extract
    • 1/2 tsp green food coloring
    • Decoration

      • sprinkles/sweets

Instructions

  • Preheat your oven to 180°C (350°F) and grease a large baking tray.
  • In a bowl, cream together the butter, white sugar, and brown sugar until fluffy.
  • Add the egg and vanilla extract, mixing well.
  • In another bowl, whisk together flour, bicarbonate of soda, sea salt, cornflour, ginger, cinnamon, and nutmeg.
  • Gradually combine dry ingredients with the wet mixture. Fold in the chocolate chips.
  • Spread the dough evenly on the prepared tray.
  • Bake for 20 minutes or until golden brown. Allow it to cool completely.

Notes

For optimal results, allow the Giant Christmas Cookie to rest before frosting.
