Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix Ingredients: In a large bowl, cream together the softened butter and brown sugar until fluffy.
- Add Wet Ingredients: Stir in the vanilla extract and eggs, mixing well.
- Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually add this to the wet mixture.
- Chill the Dough: Cover the dough and refrigerate for at least 30 minutes to firm it up.
- Shape the Cookies: Roll out the dough and cut out pumpkin shapes. Place a dollop of melted chocolate on half the cookies, then top with another cookie.
- Bake: Place them on the prepared baking sheets and bake for 12-15 minutes or until golden around the edges.
- Cool and Enjoy: Let the cookies cool on the baking sheet before transferring them to a wire rack.
