Description

  • 2 Tbsp. honey
  • 1 tsp. vanilla extract
  • Topping suggestions: powdered sugar, unsweetened cocoa powder, finely shredded coconut, finely chopped pecans, nonpareils

Instructions

  • Place the vanilla wafers and toasted pecans in a food processor and pulse until finely ground.
  • Add the powdered sugar, cocoa powder, and kosher salt. Pulse again to combine.
  • In a separate bowl, whisk together the dark rum, honey, and vanilla extract.
  • Gradually pour the wet ingredients into the dry mixture, stirring until fully incorporated.
  • Roll the mixture into 1-inch balls and coat them in your choice of toppings such as powdered sugar, cocoa powder, coconut, or pecans.
  • Chill the rum balls in the refrigerator for at least 2 hours before serving.
