Instructions
- Place the vanilla wafers and toasted pecans in a food processor and pulse until finely ground.
- Add the powdered sugar, cocoa powder, and kosher salt. Pulse again to combine.
- In a separate bowl, whisk together the dark rum, honey, and vanilla extract.
- Gradually pour the wet ingredients into the dry mixture, stirring until fully incorporated.
- Roll the mixture into 1-inch balls and coat them in your choice of toppings such as powdered sugar, cocoa powder, coconut, or pecans.
- Chill the rum balls in the refrigerator for at least 2 hours before serving.
