- 2 cups pancake mix
- 3 tablespoons brown sugar, packed
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 large egg
- ¾ cup milk
- 3 tablespoons melted butter
- 1 cup finely chopped or grated apple
- ½ cup all-purpose flour (for crumb topping)
- ¼ cup brown sugar (for crumb topping)
- 3 tablespoons cold butter, cubed (for crumb topping)
- ½ teaspoon cinnamon (for crumb topping)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a donut pan.
- In a small bowl, combine flour, brown sugar, cinnamon, and butter cubes. Mix with a fork until crumbly; set aside.
- In a large bowl, whisk pancake mix, brown sugar, cinnamon, and nutmeg. Add egg, milk, and melted butter; stir until just combined.
- Fold in the chopped apple gently. The batter should be thick but not dry.
- Spoon or pipe the batter into the donut pan, filling each cavity about two-thirds full.
- Sprinkle the crumb topping evenly over each donut, pressing lightly to help it stick.
- Bake for 12–15 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack. Enjoy warm or at room temperature.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Delicious served with coffee, chai tea, or warm apple cider.
