Soft, chewy, and packed with banana flavor, these cookies are the perfect mix of classic banana bread and a handheld sweet treat.
Ingredients

1 ripe banana, mashed

½ cup granulated sugar

¼ cup melted butter

1 cup all-purpose flour

½ teaspoon baking soda

Pinch of salt

½ teaspoon vanilla extract (optional)

¼ teaspoon ground cinnamon (optional)

½ cup chocolate chips or chopped nuts (optional)
Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a bowl, mash the banana until mostly smooth.

Stir in sugar and melted butter until combined.

Add flour, baking soda, salt, and optional spices; mix until just blended.

Fold in chocolate chips or nuts if using.

Scoop spoonfuls of dough onto the baking sheet, spacing 2 inches apart.

Bake for 10–12 minutes until edges are lightly golden and centers look set.

Cool on the sheet for 5 minutes, then transfer to a rack to finish cooling.
Notes
Store cookies in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months. Delicious with coffee, tea, or a glass of milk.
