Ingredients

8 oz elbow macaroni, uncooked

8 slices bacon, cooked and crumbled

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

1/2 cup mayonnaise

1/2 cup sour cream

1 tbsp apple cider vinegar or lemon juice

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

2 green onions, sliced
Instructions

Cook macaroni in salted water according to package directions until al dente. Drain and rinse under cold water to cool.

Cook bacon in a skillet until crispy, then drain on paper towels and crumble into pieces.

In a mixing bowl, whisk together mayonnaise, sour cream, vinegar or lemon juice, garlic powder, salt, and pepper to make the dressing.

In a large bowl, combine cooled macaroni, bacon, tomatoes, lettuce, and green onions.

Pour dressing over the salad and gently toss to coat evenly.

Cover and chill for at least 1 hour before serving for best flavor.
Notes
For best texture, add lettuce just before serving. This salad keeps in the fridge for up to 3 days but is best enjoyed fresh. Pair with grilled meats or sandwiches for a full meal.
