Description

 Juicy, bite-sized meatloaf cups filled with gooey melted cheese. Perfect for weeknight dinners, parties, or kid-friendly meals.


Ingredients

  • 1 lb ground beef (or mix of beef and pork)

  • 1/2 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 large egg

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 4 oz mozzarella cheese, cut into small cubes

  • 1/4 cup ketchup or BBQ sauce (for glaze)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a muffin tin.

  2. In a large bowl, mix ground meat, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper until just combined.

  3. Press a spoonful of meat mixture into each muffin cup, place a cheese cube in the center, then cover with more meat mixture to seal.

  4. Brush tops with ketchup or BBQ sauce for a flavorful glaze.

  5. Bake for 18–22 minutes, or until the meat reaches 160°F (71°C). Let rest for 5 minutes before serving.

Notes

Serve with mashed potatoes, roasted vegetables, or dipping sauces like marinara or ranch. Store leftovers in an airtight container for up to 4 days or freeze for 3 months.
