Description
 Juicy, bite-sized meatloaf cups filled with gooey melted cheese. Perfect for weeknight dinners, parties, or kid-friendly meals.
Ingredients
- 1 lb ground beef (or mix of beef and pork)
 - 1/2 cup breadcrumbs
 - 1/4 cup grated Parmesan cheese
 - 1 large egg
 - 1 tsp garlic powder
 - 1 tsp onion powder
 - 1/2 tsp salt
 - 1/2 tsp black pepper
 - 4 oz mozzarella cheese, cut into small cubes
 - 1/4 cup ketchup or BBQ sauce (for glaze)
 
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a muffin tin.
 - In a large bowl, mix ground meat, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper until just combined.
 - Press a spoonful of meat mixture into each muffin cup, place a cheese cube in the center, then cover with more meat mixture to seal.
 - Brush tops with ketchup or BBQ sauce for a flavorful glaze.
 - Bake for 18–22 minutes, or until the meat reaches 160°F (71°C). Let rest for 5 minutes before serving.
 
Notes
Serve with mashed potatoes, roasted vegetables, or dipping sauces like marinara or ranch. Store leftovers in an airtight container for up to 4 days or freeze for 3 months.
