Cheesy Taco Potatoes are a hearty, flavor-packed dish with crispy roasted potatoes, seasoned beef, and gooey melted cheese. Perfect for taco night!
Ingredients
- 4 to 6 medium Russet potatoes, cubed
- 1 pound lean ground beef
- 1 ounce taco seasoning mix
- 1/2 cup water
- 1 cup shredded cheddar cheese (or Mexican blend)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Optional toppings: sour cream, diced tomatoes, jalapeños, cilantro, guacamole
Instructions
- Preheat oven to 425°F (220°C). Toss cubed potatoes with olive oil, salt, and pepper, then spread evenly on a baking sheet. Roast for 25–30 minutes until golden and crispy.
- While potatoes bake, cook ground beef in a skillet over medium heat until browned. Drain excess fat if needed.
- Add taco seasoning and water to beef. Stir well and simmer for 5–7 minutes until slightly saucy.
- Remove roasted potatoes from the oven. Spoon taco beef over the potatoes and sprinkle with cheese.
- Return to oven for 5 minutes, or until cheese is melted and bubbly.
- Garnish with your favorite toppings and serve warm.
Notes
For extra crisp potatoes, avoid overcrowding the pan. Store leftovers in the fridge for up to 3 days and reheat in the oven for best texture. Serve with a fresh salad or rice for a complete meal.
