Description

  • 1 pound skinless, boneless chicken breast, diced
  • 1 (1.27 ounce) packet fajita seasoning
  • 1 tablespoon vegetable oil
  • 2 green bell peppers, chopped
  • 2 red bell peppers, chopped
  • 1 onion, chopped
  • 10 (10 inch) flour tortillas
  • 1 (8 ounce) package shredded Cheddar cheese
  • 1 (8 ounce) package shredded Monterey Jack cheese
  • 1 tablespoon bacon bits

Instructions

  • Heat oil in a large skillet over medium heat. Add chicken and fajita seasoning, cooking until chicken is no longer pink.
  • Add bell peppers and onion to the skillet, sauté until vegetables are tender.
  • Preheat a separate large skillet over medium heat.
  • Place a tortilla in the skillet, sprinkle a layer of Cheddar and Monterey Jack cheese, add a portion of the chicken and vegetable mixture, then top with another tortilla.
  • Cook until the bottom tortilla is golden brown, then flip and cook until the other side is golden brown and the cheese is melted.
  • Repeat with remaining tortillas and filling.
  • Cut into wedges and serve with your favorite salsa or guacamole.
