- 1 pound skinless, boneless chicken breast, diced
- 1 (1.27 ounce) packet fajita seasoning
- 1 tablespoon vegetable oil
- 2 green bell peppers, chopped
- 2 red bell peppers, chopped
- 1 onion, chopped
- 10 (10 inch) flour tortillas
- 1 (8 ounce) package shredded Cheddar cheese
- 1 (8 ounce) package shredded Monterey Jack cheese
- 1 tablespoon bacon bits
Instructions
- Heat oil in a large skillet over medium heat. Add chicken and fajita seasoning, cooking until chicken is no longer pink.
- Add bell peppers and onion to the skillet, sauté until vegetables are tender.
- Preheat a separate large skillet over medium heat.
- Place a tortilla in the skillet, sprinkle a layer of Cheddar and Monterey Jack cheese, add a portion of the chicken and vegetable mixture, then top with another tortilla.
- Cook until the bottom tortilla is golden brown, then flip and cook until the other side is golden brown and the cheese is melted.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve with your favorite salsa or guacamole.
