  • 4 medium russet potatoes, thinly sliced
  • 1 medium onion, sliced into rings
  • Salt and ground black pepper to taste
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • ½ teaspoon salt
  • 2 cups milk
  • 1 ½ cups shredded Cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Layer half of the potatoes in a greased baking dish. Top with onion slices and season with salt and pepper.
  3. In a saucepan, melt butter over medium heat. Stir in flour and salt, cooking for 1 minute.
  4. Gradually add milk, stirring constantly until thickened.
  5. Add shredded Cheddar cheese and stir until melted.
  6. Pour half of the cheese sauce over the potatoes and onion. Repeat layers.
  7. Cover with aluminum foil and bake for 1 hour. Remove foil and bake an additional 30 minutes until golden brown.
