  • 1 large cucumber, peeled and sliced lengthwise into thin ribbons

  • 1 cup cottage cheese (low-fat or full-fat)

  • 1 tablespoon fresh dill, chopped

  • 1 teaspoon lemon juice (optional)

  • Pinch of salt and black pepper

  • Paprika or olive oil for garnish (optional)


Instructions

  1. Peel the cucumber and slice it lengthwise into thin ribbons with a mandoline or vegetable peeler. Lay the ribbons on paper towels to absorb excess moisture.

  2. In a bowl, mix the cottage cheese with dill, lemon juice (if using), salt, and pepper until smooth and creamy.

  3. Place one cucumber ribbon on a clean surface, add a spoonful of filling at one end, then roll tightly into a wrap. Repeat with remaining slices.

  4. Arrange wraps on a platter and garnish with extra dill, a sprinkle of paprika, or a drizzle of olive oil before serving.

Notes

Best enjoyed fresh, but the cottage cheese filling can be made up to 2 days ahead and refrigerated. Avoid freezing as cucumbers lose texture. Serve as a snack, appetizer, or side dish with grilled meat or salad.
