French Onion Ground Beef and Rice Casserole

Description

A creamy, cheesy, and savory casserole made with ground beef, French onion soup, and rice. Perfect for a hearty family dinner.


Ingredients

  • 1 lb ground beef

  • 1 small onion, finely chopped

  • 1 (10.5 oz) can French onion soup

  • 1 (10.5 oz) can cream of mushroom soup

  • 1 cup uncooked long-grain rice

  • 2 cups water or beef broth

  • 1 ½ cups shredded cheddar cheese

  • 1 tbsp olive oil or butter

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.

  2. In a large skillet, heat oil over medium heat. Add ground beef and cook until browned, then stir in chopped onion until softened.

  3. Transfer beef mixture to a bowl and mix with French onion soup, cream of mushroom soup, and uncooked rice. Stir until combined.

  4. Spread the mixture evenly into the prepared baking dish. Pour in water or beef broth and gently stir. Cover tightly with foil.

  5. Bake for 45 minutes. Remove foil, sprinkle with shredded cheese, and bake uncovered for an additional 10–15 minutes until bubbly and golden.

  6. Let rest for 5 minutes before serving warm.

Notes

 Leftovers keep well in the refrigerator for up to 4 days or can be frozen for 3 months. Pair with a green salad or steamed vegetables for a complete meal.
