Description

A refreshing, tangy salad made with crisp cucumbers, juicy tomatoes, and zesty onions marinated in vinegar. Perfect as a light side dish.

Ingredients

  • 3 medium cucumbers, peeled and sliced

  • 1 medium onion, sliced into rings

  • 3 medium tomatoes, cut into wedges

  • ½ cup vinegar

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 teaspoon sugar (optional)

Instructions

  1. Peel and slice the cucumbers, cut the tomatoes into wedges, and slice the onion into thin rings.

  2. In a small bowl, whisk together the vinegar, salt, pepper, and sugar until dissolved.

  3. Place the cucumbers, tomatoes, and onions in a large bowl and pour the vinegar mixture over them.

  4. Toss gently to coat, cover, and refrigerate for at least 2–3 hours to marinate.

  5. Before serving, stir gently and adjust seasoning if needed. Serve chilled.

Notes

For best flavor, allow the salad to marinate overnight. Store in an airtight container in the refrigerator for up to 3 days. Pairs beautifully with grilled meats, seafood, or simple rice dishes.
