Description
A cheesy, crunchy, and creamy Tex-Mex style casserole made with Doritos, meat, and cheese. Perfect for busy weeknights or potlucks.
Ingredients
- 1 bag (11 oz) Nacho Cheese Doritos, crushed
- 2 cups shredded cooked chicken or cooked ground beef
- 2 cups shredded cheddar cheese (plus more if desired)
- 1 can (10.75 oz) cream of chicken soup
- 1/2 cup sour cream (optional for extra creaminess)
- 1/2 cup salsa or Rotel tomatoes (optional for spice)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Spread half of the crushed Doritos evenly in the bottom of the dish.
- In a large bowl, mix chicken or beef, cream of chicken soup, sour cream (if using), salsa or Rotel, and 1 1/2 cups cheese until combined.
- Spread the meat mixture evenly over the Dorito layer.
- Top with the remaining crushed Doritos and sprinkle with the rest of the cheese.
- Bake uncovered for 25–30 minutes, until cheese is melted and bubbly.
- Let rest 5 minutes before serving to allow layers to set.
Notes
For extra crunch, reserve some fresh Doritos to sprinkle on top before serving. Pairs well with salad, guacamole, or Mexican rice. Leftovers can be refrigerated up to 3 days and reheated in the oven or microwave.
