Description
Juicy chicken and sweet pineapple come together in a flavorful, one-pan meal served over fluffy rice. A quick and wholesome weeknight dinner.
Ingredients
- 1 pound chicken breast, cubed
- 1 cup pineapple, cubed
- 1 tablespoon olive oil
- 2 cups cooked white rice
- 1/2 cup bell pepper, diced
- 1/4 cup onion, diced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic, minced
- 1/2 teaspoon ground ginger
- Salt and pepper, to taste
- Green onions, sliced, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add cubed chicken and season with salt and pepper. Cook until lightly browned and cooked through, about 6–7 minutes.
- Stir in garlic, onion, and bell pepper. Cook for 2–3 minutes until fragrant and softened.
- Add pineapple cubes, soy sauce, honey, and ground ginger. Stir well to coat the chicken and vegetables in the sauce.
- Simmer for 3–4 minutes until the pineapple is warm and the sauce slightly thickens.
- Serve over a bed of cooked rice and garnish with sliced green onions.
Notes
For extra flavor, marinate the chicken in soy sauce and garlic for 15 minutes before cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
