  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 cup cold unsalted butter, cubed
  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 can (20 ounces) pineapple chunks, drained
  • 1 egg or milk for brushing (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

  2. Combine flour, sugar, and salt in a bowl; cut in cold butter until mixture resembles coarse crumbs.

  3. Press two-thirds of the crumb mixture into the bottom of the prepared dish; set aside remaining crumbs.

  4. Beat cream cheese, sugar, and vanilla until smooth and creamy.

  5. Fold in drained pineapple chunks gently until evenly distributed.

  6. Spread cream cheese and pineapple mixture over the crust evenly.

  7. Sprinkle remaining crumb mixture on top; optionally brush with egg or milk and sprinkle sugar.

  8. Bake 40–45 minutes until golden and filling is set but slightly soft.

  9. Cool on a wire rack for 15–20 minutes before slicing.

  10. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Cobblers can be customized with other fruits or nuts. Store covered in the refrigerator up to 5 days, or freeze up to 3 months. Serve warm or chilled.
