Ingredients

  • 1 1/2 sheets frozen puff pastry, just thawed
  • 1 small smoked chicken breast, finely chopped
  • 100g brie, cut into 24 even pieces
  • 100g (1/4 cup) Coles cranberry sauce
  • 2 tsp fresh thyme leaves
  • 1 tbsp finely chopped fresh chives

Instructions

  • Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  • Cut the puff pastry into 24 small squares and place them on the tray.
  • Add a small amount of smoked chicken to each pastry square, followed by a piece of brie.
  • Spoon a small dollop of cranberry sauce on top of the brie and sprinkle with fresh thyme leaves.
  • Bake for 12-15 minutes or until the pastry is puffed and golden.
  • Garnish with finely chopped fresh chives before serving.

Notes

Ensure the puff pastry is cold to achieve the best puffing results. You can substitute cranberry sauce with fig jam for a sweeter twist.
