- 1 1/2 sheets frozen puff pastry, just thawed
- 1 small smoked chicken breast, finely chopped
- 100g brie, cut into 24 even pieces
- 100g (1/4 cup) Coles cranberry sauce
- 2 tsp fresh thyme leaves
- 1 tbsp finely chopped fresh chives
Instructions
- Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
- Cut the puff pastry into 24 small squares and place them on the tray.
- Add a small amount of smoked chicken to each pastry square, followed by a piece of brie.
- Spoon a small dollop of cranberry sauce on top of the brie and sprinkle with fresh thyme leaves.
- Bake for 12-15 minutes or until the pastry is puffed and golden.
- Garnish with finely chopped fresh chives before serving.
Notes
Ensure the puff pastry is cold to achieve the best puffing results. You can substitute cranberry sauce with fig jam for a sweeter twist.
