  • ½ cup chopped onion
  • ¼ cup water, or more as needed
  • 35 buttery round crackers, crushed
  • 1 cup shredded Cheddar cheese
  • 2 large eggs, beaten
  • ¾ cup milk
  • ¼ cup butter, melted
  • 1 teaspoon salt
  • ground black pepper to taste
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, combine squash, onion, and water. Cook over medium heat until squash is tender, about 5 minutes. Drain well.
  3. In a large bowl, combine the squash mixture, crackers, and cheese. Mix well.
  4. In a separate bowl, mix together eggs, milk, melted butter, salt, and pepper. Stir into the squash mixture.
  5. Transfer the mixture to a 9×13 inch baking dish. Dot with the remaining 2 tablespoons of butter.
  6. Bake in the preheated oven for 25 minutes, or until lightly browned.
