Description

Ingredients

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1 cup warm milk

  • 1 1/2 cups shredded sharp cheddar cheese

  • 1/2 teaspoon paprika

  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a medium saucepan over medium heat.

  2. Whisk in the flour and cook for 1–2 minutes to form a smooth roux.

  3. Slowly pour in the warm milk while whisking constantly until thickened.

  4. Reduce heat to low and add cheese in small handfuls, stirring until melted.

  5. Season with paprika, salt, and pepper. Serve immediately over fries.

Notes

For extra spice, add cayenne or hot sauce. Store leftovers in the fridge for up to 3 days and reheat gently with a splash of milk.
