Ingredients
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup warm milk
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 teaspoon paprika
- Salt and black pepper to taste
Instructions
- Melt the butter in a medium saucepan over medium heat.
- Whisk in the flour and cook for 1–2 minutes to form a smooth roux.
- Slowly pour in the warm milk while whisking constantly until thickened.
- Reduce heat to low and add cheese in small handfuls, stirring until melted.
- Season with paprika, salt, and pepper. Serve immediately over fries.
Notes
For extra spice, add cayenne or hot sauce. Store leftovers in the fridge for up to 3 days and reheat gently with a splash of milk.
