Ingredients
- 1 lb ground beef
- 5 medium potatoes, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups beef or chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup milk or cream
- Salt, to taste
- Black pepper, to taste
- Optional: chives, bacon bits for garnish
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked, then drain excess fat.
- Add diced onions and minced garlic to the beef and sauté until fragrant and softened.
- Stir in the diced potatoes and mix with the beef and onions for a few minutes.
- Pour in the broth, bring to a boil, then reduce heat and simmer until potatoes are tender, about 15–20 minutes.
- Stir in milk or cream to create a smooth, creamy base.
- Gradually add shredded cheddar cheese, stirring until fully melted and combined.
- Season with salt and black pepper to taste.
- Serve hot, garnished with optional chives or bacon bits.
Notes
For thicker soup, mash a few potatoes before adding cheese. Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently to maintain creaminess.
