A delightful and visually stunning holiday dessert that layers raspberry jelly, vanilla custard, jam sponge, and festive decorations into a wreath-shaped trifle.

- 85g packet raspberry jelly crystals
- 600ml thickened cream
- 1 cup double-thick vanilla custard
- 2 1/2 x 400g jam sponge rolls, cut into 1cm thick slices
- 2 tbsp sweet apera (sherry)
- Mini meringues, to decorate
- Spearmint leaves, to decorate
- Fresh raspberries, to decorate
- Crushed candy canes, to decorate
- Silver cachous, to decorate
Instructions
- Prepare the jelly: Follow the instructions on the jelly crystal packet, making the raspberry jelly as per the directions. Pour it into a shallow dish and refrigerate until set.
- Whip the cream: In a mixing bowl, whip the thickened cream until soft peaks form. Set aside.
- Layer the sponge rolls: Arrange the slices of jam sponge rolls in a wreath shape on the base of your serving dish. Drizzle the sherry evenly over the sponge.
- Add custard and jelly layers: Spoon the custard over the sponge slices. Cut the set jelly into cubes and scatter them over the custard layer.
- Top with cream: Spoon the whipped cream over the jelly layer, covering the entire surface.
- Decorate: Decorate with mini meringues, fresh raspberries, spearmint leaves, crushed candy canes, and silver cachous.
Notes
- For added flavor, use homemade custard or add a splash of vanilla extract to store-bought custard.
- Adjust the amount of sherry to your preference or omit it for a kid-friendly version.
