Description
Delicious and festive White Christmas Tree Pops made with a blend of white chocolate, dried cranberries, pistachios, coconut, and puffed rice cereal, topped with colorful M&M’s Minis. These pops are a fun and easy-to-make holiday treat perfect for family gatherings or gifting.

- 550g white chocolate, chopped
- 100g copha (solidified coconut oil)
- 1/3 cup pistachio kernels, toasted and chopped
- 1/2 cup dried cranberries, finely chopped
- 3/4 cup desiccated coconut
- 2 1/2 cups puffed rice cereal
- 160g packet M&M’s Minis (pink and brown colors discarded), to decorate
Instructions
- Prepare Molds: Line a baking tray with parchment paper and set aside small Christmas tree-shaped silicone molds.
- Melt White Chocolate: In a heatproof bowl, melt white chocolate and copha over simmering water, stirring until smooth.
- Mix Dry Ingredients: Combine pistachios, cranberries, coconut, and puffed rice cereal in a large bowl.
- Combine Ingredients: Pour the melted white chocolate mixture over the dry ingredients and stir until evenly coated.
- Mold and Shape: Spoon the mixture into the molds, pressing firmly to shape. Insert a lollipop stick into each pop and top with M&M’s Minis for decoration.
- Chill: Refrigerate the pops for 1 hour, or until fully set.
- Serve: Gently remove from molds and serve as a festive treat.
Notes
- These pops can be stored in an airtight container for up to 1 week.
- Feel free to swap out the pistachios for other nuts or omit them for a nut-free version.
