Baked Feta & Pesto Gnocchi Bake with tomatoes and basil—an easy, comforting, and flavorful one-dish dinner everyone loves.

- 8 oz feta cheese (block)
- 24 oz cherry tomatoes
- 16 oz shelf-stable gnocchi
- ¼ red onion, thinly sliced
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- Salt & black pepper, to taste
- Fresh basil, chopped (for garnish)
- Parmesan cheese, grated (for serving)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a large baking dish.
- Add the cherry tomatoes, sliced red onion, and gnocchi to the baking dish.
- Place the block of feta in the center of the dish.
- Drizzle everything with olive oil and sprinkle evenly with Italian seasoning, salt, and black pepper.
- Toss the tomatoes and gnocchi gently, keeping the feta centered.
- Bake uncovered for 35–40 minutes, until the tomatoes burst and the feta is soft and lightly golden.
- Remove from the oven and gently mash the feta with a fork, stirring everything together until creamy.
- Stir in pesto to taste (optional but recommended) and adjust seasoning if needed.
- Garnish with fresh basil and grated parmesan before serving.
Notes
Shelf-stable gnocchi works best, as it bakes without becoming mushy.
Add a splash of pasta water or olive oil if the sauce feels too thick.
Serve immediately for the best texture.
