Ingredients

4 boneless, skinless chicken breasts

1/4 cup fresh lime juice

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 ripe avocados, diced

1 cup cherry tomatoes, diced

1/4 cup red onion, finely chopped

2 tablespoons fresh cilantro, chopped

1 tablespoon lime juice

1 small jalapeño, minced (optional)

Salt and pepper, to taste
Instructions

In a bowl, whisk lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper. Coat chicken in marinade, cover, and refrigerate for 30 minutes to 4 hours.

Preheat grill or grill pan to medium-high heat. Lightly oil the grates.

Grill chicken 6–7 minutes per side or until internal temperature reaches 165°F (74°C). Remove and rest for 5 minutes.

While chicken cooks, prepare avocado salsa by combining avocados, tomatoes, onion, cilantro, lime juice, and jalapeño. Season with salt and pepper.

Top grilled chicken with avocado salsa and serve immediately with your favorite sides.
Notes
Serve with rice, tortillas, or salad for a complete meal. Store leftover chicken in the fridge for up to 4 days. Make salsa fresh for best flavor.
