Description
A hearty one-pan casserole made with ground beef, rice, and French onion soup, baked with cheese for a cozy family dinner.
Ingredients
- 1 lb ground beef
- 1 small onion, finely chopped
- 1 (10.5 oz) can French onion soup
- 1 1/2 cups beef broth
- 1 cup long-grain white rice, uncooked
- 1 cup shredded cheddar cheese (or cheese of choice)
- 1 tbsp olive oil or butter
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional garnish)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
- In a skillet, heat olive oil and cook ground beef until browned. Add chopped onion and sauté until softened. Drain excess grease if needed.
- Stir in the French onion soup, beef broth, and uncooked rice. Season with salt and pepper, mixing until combined.
- Transfer the mixture to the casserole dish, cover tightly with foil, and bake for 50–55 minutes until the rice is tender.
- Remove foil, sprinkle cheese evenly over the top, and bake uncovered for an additional 5–10 minutes until melted and bubbly.
- Let rest for 5 minutes before serving, garnishing with parsley if desired.
Notes
 This casserole can be prepared a day in advance and refrigerated before baking. Leftovers store well in the fridge for up to 4 days or can be frozen for up to 3 months. Serve with a green salad or roasted vegetables for a complete meal.
