French Onion Ground Beef and Rice Casserole

Description

A hearty one-pan casserole made with ground beef, rice, and French onion soup, baked with cheese for a cozy family dinner.


Ingredients

  • 1 lb ground beef

  • 1 small onion, finely chopped

  • 1 (10.5 oz) can French onion soup

  • 1 1/2 cups beef broth

  • 1 cup long-grain white rice, uncooked

  • 1 cup shredded cheddar cheese (or cheese of choice)

  • 1 tbsp olive oil or butter

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (optional garnish)


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.

  2. In a skillet, heat olive oil and cook ground beef until browned. Add chopped onion and sauté until softened. Drain excess grease if needed.

  3. Stir in the French onion soup, beef broth, and uncooked rice. Season with salt and pepper, mixing until combined.

  4. Transfer the mixture to the casserole dish, cover tightly with foil, and bake for 50–55 minutes until the rice is tender.

  5. Remove foil, sprinkle cheese evenly over the top, and bake uncovered for an additional 5–10 minutes until melted and bubbly.

  6. Let rest for 5 minutes before serving, garnishing with parsley if desired.

Notes

 This casserole can be prepared a day in advance and refrigerated before baking. Leftovers store well in the fridge for up to 4 days or can be frozen for up to 3 months. Serve with a green salad or roasted vegetables for a complete meal.
