  • 2 medium yellow onions, thinly sliced
  • 1 large egg
  • 2 tablespoons Worcestershire sauce, divided
  • 2 1/4 cups beef broth, divided
  • 1 1/2 pounds lean ground beef
  • 1/3 cup panko breadcrumbs
  • 2 teaspoons Italian seasoning
  • 2 teaspoons garlic powder
  • Salt and pepper, to taste
  • 1/3 cup flour
  • 8 slices provolone cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Caramelize the Onions
    In a large skillet, melt butter over medium heat. Add thinly sliced onions and cook slowly, stirring frequently, until golden brown and caramelized, about 25-30 minutes. This process releases the onions’ natural sugars, creating a deep, sweet flavor. Avoid rushing this step by keeping the heat moderate and stirring often to prevent burning. Set aside half of the onions for topping later.
  2. Prepare the Meat Mixture
    In a large bowl, combine ground beef, egg, panko breadcrumbs, 1 tablespoon Worcestershire sauce, Italian seasoning, garlic powder, salt, and pepper. Mix gently to avoid compacting the meat, which can make patties tough.
  3. Form and Coat Patties
    Shape the meat mixture into 6 even patties, approximately ¾-inch thick. Dredge each patty lightly in flour, shaking off the excess. The flour helps create a beautiful crust when searing and thickens the gravy later.
  4. Cook the Patties
    Heat a large skillet over medium-high heat and add a bit of butter or oil. Brown the patties for 3-4 minutes per side until a golden crust forms but they are not fully cooked through. Remove patties and set aside.
  5. Make the Gravy
    Add the remaining caramelized onions to the skillet. Stir in the remaining tablespoon of Worcestershire sauce and 2 cups beef broth, scraping browned bits from the pan to incorporate rich flavor into the sauce. Bring to a simmer and allow to thicken slightly.
  6. Simmer Patties in Sauce
    Return the patties to the skillet and spoon gravy over them. Cover and simmer for 15 minutes until patties are cooked through and flavors meld.
  7. Add Cheese
    Top each patty with provolone slices and sprinkle with Parmesan cheese. Cover again and cook until the cheese melts, about 2-3 minutes. The melted cheeses add creamy richness and a savory finish.
  8. Serve
    Serve hot with mashed potatoes, rice, buttered noodles, or any side that soaks up the delicious onion gravy.
