- 1/2 cup dried cranberries
- 1/3 cup orange juice
- 150g green cabbage, shredded
- 1 large carrot, cut into long matchsticks
- 1 large celery stalk, trimmed, cut into long matchsticks
- 1 granny smith apple, cored, cut into long matchsticks
- 1 green onion, cut into long matchsticks
- 3/4 cup fresh flat-leaf parsley leaves
- 3/4 cup pecans, toasted, roughly chopped
- 2 tbsp apple cider vinegar
- 2 tbsp maple syrup
- 2 tbsp extra virgin olive oil
- 2 tsp wholegrain mustard
- 1 large beetroot, peeled, cut into long matchsticks
Instructions
- In a large bowl, combine the shredded cabbage, carrot, celery, apple, green onion, parsley, pecans, and cranberries.
- In a separate small bowl, whisk together the orange juice, apple cider vinegar, maple syrup, olive oil, and mustard until well combined.
- Pour the dressing over the vegetable mixture and toss until everything is well coated.
- Add the beetroot matchsticks last, tossing gently to avoid staining all the other ingredients red.
- Let the slaw sit for at least 15 minutes before serving to allow the flavors to meld.
Notes
Add more maple syrup for a sweeter flavor or adjust mustard for tanginess.
