Smoky, savory easy fried cabbage with bacon and mustard. A quick, flavorful side dish perfect for any weeknight meal.

- 6 pieces bacon, cut into 1-inch pieces
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 tablespoons stone ground mustard (or Dijon mustard)
- ¼ teaspoon smoked paprika
- 1 head cabbage, sliced and chopped
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Cook the bacon: In a large skillet over medium heat, cook the bacon until crisp. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.
- Sauté the onions and garlic: Add the diced onion to the bacon fat and sauté until soft and golden, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds.
- Add seasoning: Stir in the mustard and smoked paprika, mixing well to coat the onions and garlic.
- Cook the cabbage: Add the chopped cabbage to the skillet, tossing well to combine. Cook for 10-15 minutes, stirring occasionally, until the cabbage is tender and starts to brown in spots.
- Finish with bacon: Return the cooked bacon to the pan. Season everything with salt and freshly ground black pepper to taste. Stir to combine.
- Serve hot: Transfer to a serving bowl and enjoy warm.
Notes
For a milder flavor, use green cabbage. For more bite, try Napa or Savoy.
Don’t overcrowd the pan; if your skillet is small, cook the cabbage in batches.
Deglaze with a splash of apple cider vinegar or chicken broth for added brightness.
