For the Garlic Butter:
- ¼ cup unsalted butter (½ stick, softened)
- ½ tablespoon garlic, minced (about 1 large clove)
- ¼ teaspoon salt
For the Grilled Cheese:
- 8 slices sourdough bread
- 4 slices cheddar cheese
- 4 slices mozzarella cheese
- 4 slices Swiss cheese
Instructions
- Make the Garlic Butter
In a small bowl, combine the softened butter, minced garlic, and salt. Mix until fully combined. Set aside. If possible, let sit for 5–10 minutes so the flavors meld. - Prep the Bread
Lay out all 8 slices of sourdough. Spread garlic butter on one side of each slice. This side will be the outside of your sandwich, so be generous! - Assemble the Sandwiches
On the unbuttered side of 4 slices, layer one slice each of cheddar, mozzarella, and Swiss. Top with the other slices of bread, buttered side out, to make 4 sandwiches. - Grill the Sandwiches
Heat a skillet or griddle over medium-low heat. Place sandwiches in the pan (don’t overcrowd) and cook for 3–4 minutes per side, or until golden brown and the cheese is fully melted. Press down gently with a spatula to help toast evenly. - Serve Immediately
Slice in half, serve hot, and enjoy. Add soup or salad on the side for a full meal.
Notes
Let your butter soften fully to mix smoothly with garlic.
Don’t rush grilling—lower heat ensures melty cheese without burning bread.
Press sandwiches gently to improve browning but don’t flatten them.
You can pre-roast the garlic for a sweeter, milder garlic flavor.
Use freshly sliced cheese for best melt and flavor.
