  • ¼ cup ghee or butter, divided

  • 1 tablespoon olive oil

  • 1 lb Yukon gold potatoes, cut into ½ inch cubes

  • 3 garlic cloves, minced

  • 1 teaspoon dried thyme

  • ½ teaspoon dried oregano

  • ½ teaspoon sea salt, plus more to taste

  • ¼ teaspoon ground black pepper, plus more to taste

  • 1 ¼ lb sirloin steak, cut into ½ inch cubes


Instructions

  • Prep the Potatoes:
    Wash and cut Yukon gold potatoes into ½ inch cubes for even cooking.

  • Cook the Potatoes:
    In a large skillet, heat half the ghee or butter (2 tablespoons) and olive oil over medium heat. Add the potatoes, sprinkle with ¼ teaspoon sea salt and pepper, and cook, stirring occasionally, until golden and tender, about 15-20 minutes. Remove potatoes from skillet and set aside.

  • Cook the Steak Bites:
    Add the remaining ghee or butter to the skillet and increase heat to medium-high. Add the steak cubes, sprinkle with thyme, oregano, salt, and pepper, and cook for about 2-3 minutes on each side until browned and cooked to your preferred doneness.

  • Add Garlic and Combine:
    Lower heat to medium, add the minced garlic, and stir for 30 seconds until fragrant. Return the cooked potatoes to the skillet and toss everything together to coat with the garlic butter and herbs.

  • Serve:
    Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.

Notes

Yukon gold potatoes hold their shape well and develop a crispy exterior when sautéed.

Cut steak evenly to ensure uniform cooking.

Avoid overcrowding the pan when cooking steak bites to ensure a proper sear.
