A savory Garlic Olive Oil Dip perfect for bread — rich garlic, herbs, parmesan for dipping bliss.


Ingredients

Scale
  • 12 cloves garlic, very finely minced
  • ¼ teaspoon red pepper flakes (adjust to taste)
  • ½ teaspoon dried oregano
  • ¼ cup freshly grated parmesan cheese
  • ¼ cup extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Salt, to taste

For garnish:

  • Fresh chopped parsley

For serving:

  • Bread for dipping (we love focaccia or a crusty Italian loaf)

Instructions

  1. Prepare the garlic and seasonings.
    Mince the garlic as finely as possible — you want it almost paste-like so it disperses evenly. Mix the garlic with red pepper flakes and oregano.
  2. Add the cheese.
    Stir in the freshly grated parmesan cheese.
  3. Emulsify with olive oil.
    Slowly drizzle in the olive oil while whisking. Combine until smooth.
  4. Season to taste.
    Add black pepper and salt (sparingly, due to the salty cheese). Mix well.
  5. Let it rest (optional).
    Let the dip sit for 15–20 minutes to meld the flavors.
  6. Garnish and serve.
    Sprinkle with chopped parsley. Serve with bread.
  7. Stir before serving.
    Stir again before serving if the oil separates.
