A savory Garlic Olive Oil Dip perfect for bread — rich garlic, herbs, parmesan for dipping bliss.
Ingredients
Scale
- 1–2 cloves garlic, very finely minced
- ¼ teaspoon red pepper flakes (adjust to taste)
- ½ teaspoon dried oregano
- ¼ cup freshly grated parmesan cheese
- ¼ cup extra virgin olive oil
- Freshly ground black pepper, to taste
- Salt, to taste
For garnish:
- Fresh chopped parsley
For serving:
- Bread for dipping (we love focaccia or a crusty Italian loaf)
Instructions
- Prepare the garlic and seasonings.
Mince the garlic as finely as possible — you want it almost paste-like so it disperses evenly. Mix the garlic with red pepper flakes and oregano. - Add the cheese.
Stir in the freshly grated parmesan cheese. - Emulsify with olive oil.
Slowly drizzle in the olive oil while whisking. Combine until smooth. - Season to taste.
Add black pepper and salt (sparingly, due to the salty cheese). Mix well. - Let it rest (optional).
Let the dip sit for 15–20 minutes to meld the flavors. - Garnish and serve.
Sprinkle with chopped parsley. Serve with bread. - Stir before serving.
Stir again before serving if the oil separates.
