Juicy and tender chicken meatloaf packed with garlic, herbs, and Parmesan cheese, finished with a golden cheesy crust for the ultimate comfort food.
Ingredients
- 2 lbs ground chicken
- 1 cup grated Parmesan cheese, plus extra for topping
- 1/2 cup panko breadcrumbs
- 2 large eggs
- 3 cloves garlic, minced
- 1 tsp garlic powder
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C) and grease or line a 9×5-inch loaf pan.
- In a large bowl, combine ground chicken, Parmesan, breadcrumbs, eggs, garlic, garlic powder, parsley, olive oil, salt, and pepper. Mix until just combined.
- Transfer mixture to the loaf pan, shaping evenly, and sprinkle extra Parmesan on top.
- Bake for 50–60 minutes, or until the internal temperature reaches 165°F (74°C). Cover loosely with foil if browning too quickly.
- Let the meatloaf rest for 10 minutes before slicing. Serve warm with your favorite sides.
Notes
For extra flavor, mix in a small amount of ground pork or add shredded zucchini for moisture. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
