Description

Juicy and tender chicken meatloaf packed with garlic, herbs, and Parmesan cheese, finished with a golden cheesy crust for the ultimate comfort food.


Ingredients

  • 2 lbs ground chicken

  • 1 cup grated Parmesan cheese, plus extra for topping

  • 1/2 cup panko breadcrumbs

  • 2 large eggs

  • 3 cloves garlic, minced

  • 1 tsp garlic powder

  • 2 tbsp fresh parsley, chopped

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and grease or line a 9×5-inch loaf pan.

  2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, eggs, garlic, garlic powder, parsley, olive oil, salt, and pepper. Mix until just combined.

  3. Transfer mixture to the loaf pan, shaping evenly, and sprinkle extra Parmesan on top.

  4. Bake for 50–60 minutes, or until the internal temperature reaches 165°F (74°C). Cover loosely with foil if browning too quickly.

  5. Let the meatloaf rest for 10 minutes before slicing. Serve warm with your favorite sides.

Notes

For extra flavor, mix in a small amount of ground pork or add shredded zucchini for moisture. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
