Grilled Egg & Cheese Sandwich

Description

Quick grilled egg & cheese sandwich with fresh greens, pan-toasted for crispy bread and melted cheese. Perfect for breakfast or lunch.


Ingredients

Scale
  • 2 slices of bread (your choice: white, whole wheat, sourdough)

  • 12 eggs

  • Shredded cheese (cheddar, mozzarella, or your favorite)

  • A handful of leafy greens (spinach or kale recommended)

  • Butter or oil for toasting

  • Salt and pepper (optional)


Instructions

  • Prepare the Greens
    Rinse and dry a handful of spinach or kale. If using kale, remove thick stems and chop leaves roughly.

  • Cook the Eggs
    In a small pan over medium heat, lightly scramble or fry the eggs. Season with salt and pepper if desired.

  • Toast the Bread
    Heat a skillet or frying pan on medium. Spread butter or oil on one side of each bread slice.

  • Assemble the Sandwich
    Place one slice of bread, buttered side down, on the skillet. Immediately layer eggs, shredded cheese, and greens on top.

  • Top and Toast
    Cover with the second bread slice, buttered side up. Cook for 2-3 minutes until the bottom is golden and crisp.

  • Flip and Cook
    Carefully flip the sandwich with a spatula and toast the other side until golden and the cheese is melted, about 2-3 minutes.

  • Serve Warm
    Remove from pan, slice if desired, and enjoy immediately.
