- 12 hard-boiled large eggs
- 1/4 cup mayonnaise
- 1/4 cup roasted sweet red pepper strips, finely chopped
- 2 teaspoons Dijon mustard
- 2 teaspoons cider vinegar
- 1 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup finely crushed corn chips
- Whole corn chips (optional for garnish)
Instructions
- Peel the hard-boiled eggs and slice each in half lengthwise. Carefully remove yolks and place in a mixing bowl.
- Mash the yolks until smooth using a fork.
- Add mayonnaise, red peppers, mustard, vinegar, paprika, salt, and pepper. Mix thoroughly until creamy.
- Spoon or pipe the filling back into the egg whites.
- Sprinkle crushed corn chips generously on top for texture and crunch.
- Garnish with a whole corn chip “witch hat” or olive slice if desired.
- Chill until ready to serve.
Notes
Use a piping bag for a cleaner, neater filling.
Make sure the yolks are fully cooled before mixing for the best texture.
For smoky depth, substitute smoked paprika.
Roasted red peppers can be blended for a smoother texture or left chunky for contrast.
