Ingredients

  • 12 hard-boiled large eggs
  • 1/4 cup mayonnaise
  • 1/4 cup roasted sweet red pepper strips, finely chopped
  • 2 teaspoons Dijon mustard
  • 2 teaspoons cider vinegar
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup finely crushed corn chips
  • Whole corn chips (optional for garnish)

Instructions

  1. Peel the hard-boiled eggs and slice each in half lengthwise. Carefully remove yolks and place in a mixing bowl.
  2. Mash the yolks until smooth using a fork.
  3. Add mayonnaise, red peppers, mustard, vinegar, paprika, salt, and pepper. Mix thoroughly until creamy.
  4. Spoon or pipe the filling back into the egg whites.
  5. Sprinkle crushed corn chips generously on top for texture and crunch.
  6. Garnish with a whole corn chip “witch hat” or olive slice if desired.
  7. Chill until ready to serve.

Notes

Use a piping bag for a cleaner, neater filling.

Make sure the yolks are fully cooled before mixing for the best texture.

For smoky depth, substitute smoked paprika.

Roasted red peppers can be blended for a smoother texture or left chunky for contrast.
