Cookie Dough Base
- 1½ cups almond flour
- ¼ cup cashew butter (or peanut butter)
- ¼ cup maple syrup
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- ¼ tsp salt
- ¼ cup chocolate chips
Chocolate Topping
- 1 cup chocolate chips
- 1 tsp coconut oil
- Flaky sea salt (optional)
Instructions
- Make the Cookie Dough Base
In a bowl, mix almond flour, cashew butter, maple syrup, coconut oil, vanilla, and salt until a dough forms. - Fold in Chocolate Chips
Stir in the chocolate chips until evenly distributed. - Spread the Dough
Press the dough onto a parchment-lined baking sheet into a flat, even rectangle. - Prepare the Chocolate Topping
Melt chocolate chips with coconut oil in the microwave or stovetop until smooth. - Pour and Spread the Chocolate
Spread melted chocolate over the cookie dough layer. - Add Sea Salt
Sprinkle flaky sea salt on top if desired. - Chill and Break
Freeze for 20–30 minutes until firm. Break into bark pieces and enjoy.
Notes
Store in the fridge for a soft texture or freezer for crunchy bark.
Swap cashew butter with almond or sunflower seed butter.
