Cookie Dough Base

  • 1½ cups almond flour
  • ¼ cup cashew butter (or peanut butter)
  • ¼ cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¼ cup chocolate chips

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt (optional)

Instructions

  1. Make the Cookie Dough Base
    In a bowl, mix almond flour, cashew butter, maple syrup, coconut oil, vanilla, and salt until a dough forms.
  2. Fold in Chocolate Chips
    Stir in the chocolate chips until evenly distributed.
  3. Spread the Dough
    Press the dough onto a parchment-lined baking sheet into a flat, even rectangle.
  4. Prepare the Chocolate Topping
    Melt chocolate chips with coconut oil in the microwave or stovetop until smooth.
  5. Pour and Spread the Chocolate
    Spread melted chocolate over the cookie dough layer.
  6. Add Sea Salt
    Sprinkle flaky sea salt on top if desired.
  7. Chill and Break
    Freeze for 20–30 minutes until firm. Break into bark pieces and enjoy.

Notes

Store in the fridge for a soft texture or freezer for crunchy bark.

Swap cashew butter with almond or sunflower seed butter.
