- 1 cup fresh spinach, packed down
- 1 cup whole milk (more if needed)
- 2 eggs
- 2 tablespoons oil
- 2 teaspoons vanilla extract
- 2 cups pancake mix
- Mini candy eyeballs (found in the cake decorating section)
Instructions
- Blend spinach, milk, eggs, oil, and vanilla extract in a blender until smooth.
- In a large bowl, combine the blended spinach mixture with the pancake mix. Stir until combined. Add more milk if the batter is too thick.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil or butter.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.
- Remove from heat and immediately place the mini candy eyeballs on top of the pancakes to create a “monster” look.
Notes
- You can add more candy eyeballs or change their placement to create unique monster faces.
- Serve with fresh fruit or a drizzle of honey for added sweetness.
