Ingredients

  • 4 (3-pound) whole chickens
  • 16 carrots, halved
  • 16 stalks celery, halved
  • 4 large onions, halved
  • Water to cover
  • Salt and pepper to taste
  • 4 teaspoons chicken bouillon granules (optional)

Instructions

  • Place the chickens in a large pot and cover with water.
  • Add carrots, celery, and onions, and bring to a boil.
  • Reduce heat and simmer for 1-2 hours, skimming off any impurities.
  • Once the chicken is cooked, remove it from the pot and shred the meat.
  • Return shredded chicken to the pot, add salt, pepper, and chicken bouillon (if using).
  • Continue simmering for an additional 30 minutes to meld the flavors.

Notes

  • You can use chicken breasts or thighs instead of whole chickens.
