Description
Crispy flour tortillas layered with seasoned beef, refried beans, cheese, and fresh toppings make this homemade Mexican pizza a family favorite. Perfect for weeknight dinners or casual gatherings.
Ingredients
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
- 1/2 cup water
- 6 medium flour tortillas
- 1 can (16 ounces) refried beans
- 1 cup enchilada sauce or salsa
- 2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives (optional)
- 2 green onions, chopped
- Sour cream, for serving
- Fresh cilantro, for garnish
Instructions
- stir in taco seasoning and water. Simmer for 3–4 minutes until thickened.
- Preheat oven to 400°F (200°C). Place tortillas on a baking sheet and bake for 3–4 minutes per side until crisp and golden.
- Spread a layer of refried beans on one tortilla, then top with seasoned beef. Place a second tortilla on top to create a stack.
- Spread enchilada sauce over the top tortilla, sprinkle with cheese, and add tomatoes, olives, or other toppings.
- Bake for 8–10 minutes until cheese is melted and bubbly. Remove from oven and let rest 2–3 minutes before slicing.
- Garnish with green onions, sour cream, and cilantro before serving.
Notes
For extra crunch, pan-fry tortillas before assembling. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or air fryer.
