Homemade Mexican Pizza

Description

 Crispy flour tortillas layered with seasoned beef, refried beans, cheese, and fresh toppings make this homemade Mexican pizza a family favorite. Perfect for weeknight dinners or casual gatherings.


Ingredients

  • 1 pound lean ground beef

  • 1 packet (1 ounce) taco seasoning

  • 1/2 cup water

  • 6 medium flour tortillas

  • 1 can (16 ounces) refried beans

  • 1 cup enchilada sauce or salsa

  • 2 cups shredded cheddar or Mexican blend cheese

  • 1/2 cup diced tomatoes

  • 1/4 cup sliced black olives (optional)

  • 2 green onions, chopped

  • Sour cream, for serving

  • Fresh cilantro, for garnish


Instructions

  1. stir in taco seasoning and water. Simmer for 3–4 minutes until thickened.

  2. Preheat oven to 400°F (200°C). Place tortillas on a baking sheet and bake for 3–4 minutes per side until crisp and golden.

  3. Spread a layer of refried beans on one tortilla, then top with seasoned beef. Place a second tortilla on top to create a stack.

  4. Spread enchilada sauce over the top tortilla, sprinkle with cheese, and add tomatoes, olives, or other toppings.

  5. Bake for 8–10 minutes until cheese is melted and bubbly. Remove from oven and let rest 2–3 minutes before slicing.

  6. Garnish with green onions, sour cream, and cilantro before serving.

Notes

 For extra crunch, pan-fry tortillas before assembling. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or air fryer.
