Juicy honey-lime marinated chicken paired with creamy avocado and fluffy rice makes a fresh, wholesome, and satisfying meal. Perfect for weeknights or meal prep.
Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 garlic cloves, minced
- Salt and black pepper, to taste
- 2 cups cooked white or brown rice
- 1 large ripe avocado
- 1 teaspoon olive oil (for avocado mash)
- 1 tablespoon lime juice (for avocado mash)
- Fresh cilantro or green onions, for garnish
Instructions
- In a bowl, whisk olive oil, honey, lime juice, lime zest, garlic, salt, and pepper. Add chicken and marinate for at least 30 minutes.
- Cook rice according to package directions. Fluff with a fork and set aside.
- Heat a skillet over medium-high heat. Cook chicken 5–7 minutes per side until golden and fully cooked. Rest for 5 minutes before slicing.
- Mash avocado with olive oil, lime juice, salt, and pepper until smooth or slightly chunky.
- To assemble, layer rice, mashed avocado, and sliced chicken. Garnish with cilantro or green onions and serve immediately.
Notes
For a neat presentation, use a ring mold to stack the layers. Store chicken and rice separately for up to 3 days in the fridge. Add avocado fresh before serving to prevent browning.
