Description

Juicy honey-lime marinated chicken paired with creamy avocado and fluffy rice makes a fresh, wholesome, and satisfying meal. Perfect for weeknights or meal prep.


Ingredients

  • 2 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 2 tablespoons honey

  • 2 tablespoons fresh lime juice

  • 1 teaspoon lime zest

  • 2 garlic cloves, minced

  • Salt and black pepper, to taste

  • 2 cups cooked white or brown rice

  • 1 large ripe avocado

  • 1 teaspoon olive oil (for avocado mash)

  • 1 tablespoon lime juice (for avocado mash)

  • Fresh cilantro or green onions, for garnish


Instructions

  1. In a bowl, whisk olive oil, honey, lime juice, lime zest, garlic, salt, and pepper. Add chicken and marinate for at least 30 minutes.

  2. Cook rice according to package directions. Fluff with a fork and set aside.

  3. Heat a skillet over medium-high heat. Cook chicken 5–7 minutes per side until golden and fully cooked. Rest for 5 minutes before slicing.

  4. Mash avocado with olive oil, lime juice, salt, and pepper until smooth or slightly chunky.

  5. To assemble, layer rice, mashed avocado, and sliced chicken. Garnish with cilantro or green onions and serve immediately.

Notes

 For a neat presentation, use a ring mold to stack the layers. Store chicken and rice separately for up to 3 days in the fridge. Add avocado fresh before serving to prevent browning.
