Ingredients
Scale
- 1 cup water
- ⅔ cup white sugar
- ½ cup walnuts
- 4 large egg whites
- ⅔ cup mochiko (glutinous rice flour)
- 1 cup vegetable oil for frying
- 1 pound large shrimp, peeled and deveined
- ¼ cup mayonnaise
- 2 tablespoons honey
- 1 tablespoon canned sweetened condensed milk
Instructions
- Prep the Walnuts: First, bring the water and sugar to a boil in a small saucepan. Add the walnuts and cook until the syrup thickens, then drain and set aside.
- Batter and Fry Shrimp: Next, beat the egg whites until frothy. Add the mochiko and mix well to form a batter. Coat the shrimp in the batter and fry in hot vegetable oil until golden brown. Drain on paper towels.
- Prepare the Sauce: In a bowl, mix the mayonnaise, honey, and condensed milk until smooth.
- Combine and Serve: Finally, toss the fried shrimp with the sauce and top with the candied walnuts. Serve immediately.
Notes
For extra crispiness, ensure the oil is hot before frying. Also, consider using a deep fryer for even cooking.
