Description
A crisp, refreshing salad with broccoli, sweet Honeycrisp apple, and tangy cranberries. Perfect as a side dish or light lunch.
Ingredients
- 4 cups broccoli florets, chopped
- 1 large Honeycrisp apple, diced
- 1/2 cup dried cranberries
- 1/3 cup sunflower seeds or pumpkin seeds
- 1/4 cup red onion, finely chopped
- 1/2 cup shredded carrots
- 1/2 cup sharp cheddar cheese, cubed or shredded
Dressing:
- 1/2 cup plain Greek yogurt (or mayonnaise)
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
Instructions
- In a large bowl, combine the broccoli, apple, cranberries, seeds, onion, carrots, and cheese.
- In a small bowl, whisk together Greek yogurt, honey, vinegar, Dijon mustard, salt, and pepper until smooth.
- Pour the dressing over the salad ingredients and toss until evenly coated.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Serve chilled as a fresh side dish or enjoy as a light, nutritious meal.
Notes
For extra crunch, toast the seeds before adding. This salad keeps well in the fridge for up to 2 days but is best enjoyed fresh. Add cooked chicken for more protein.
