Description

A crisp, refreshing salad with broccoli, sweet Honeycrisp apple, and tangy cranberries. Perfect as a side dish or light lunch.


Ingredients

  • 4 cups broccoli florets, chopped

  • 1 large Honeycrisp apple, diced

  • 1/2 cup dried cranberries

  • 1/3 cup sunflower seeds or pumpkin seeds

  • 1/4 cup red onion, finely chopped

  • 1/2 cup shredded carrots

  • 1/2 cup sharp cheddar cheese, cubed or shredded

Dressing:

  • 1/2 cup plain Greek yogurt (or mayonnaise)

  • 2 tablespoons honey

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon Dijon mustard

  • Salt and black pepper, to taste


Instructions

  1. In a large bowl, combine the broccoli, apple, cranberries, seeds, onion, carrots, and cheese.

  2. In a small bowl, whisk together Greek yogurt, honey, vinegar, Dijon mustard, salt, and pepper until smooth.

  3. Pour the dressing over the salad ingredients and toss until evenly coated.

  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

  5. Serve chilled as a fresh side dish or enjoy as a light, nutritious meal.

Notes

For extra crunch, toast the seeds before adding. This salad keeps well in the fridge for up to 2 days but is best enjoyed fresh. Add cooked chicken for more protein.
