- 170g/6ozs butter, softened
- 280g/10ozs white caster superfine sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 360g/12ozs all-purpose flour
- 1 teaspoon finely ground tea leaves (optional)
- Gingerbread man cutter
- For decoration:
- Icing pens (various colors and tips, glitter ones for needle details)
- Red fondant
- Small red cutter for hearts
Instructions
- Preheat the oven to 180°C/350°F (160°C fan).
- Cream the butter and sugar until light and fluffy.
- Add the eggs, one at a time, and mix in the vanilla extract.
- Gradually sift in the flour and optional tea leaves, mixing until a dough forms.
- Roll out the dough and cut out gingerbread-man shapes using your cutter.
- Bake the cookies for 10-12 minutes or until golden.
- Let them cool completely before decorating.
- Use icing pens to draw “stitches” and glitter pens for “needles.” Shape a small red heart out of fondant and stick it to the chest of each doll using a little icing.
