Ingredients
- 1 1/2 pounds ground beef, cooked and drained
- 3 bell peppers, sliced
- 1 large onion, sliced
- 4 medium potatoes, thinly sliced
- 2 cups shredded provolone or mozzarella cheese
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- In a skillet, cook the ground beef until browned, then drain any excess grease.
- Slice the bell peppers, onion, and potatoes evenly to ensure they cook properly.
- Lightly grease the crockpot with olive oil, then layer half the potatoes on the bottom.
- Add half the ground beef, peppers, onions, and cheese. Season with garlic powder, salt, and pepper.
- Repeat the layers with remaining potatoes, beef, veggies, and cheese.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are fork-tender.
- Serve hot, garnished with fresh parsley if desired.
Notes
This casserole reheats well and can be stored in the fridge for up to 4 days. For a spicier twist, add jalapeños or red pepper flakes. Serve with a side salad or crusty bread.
