Italian Cheese Log – Creamy, Savory & Perfect for Parties

Description

Creamy, savory Italian Cheese Log packed with herbs, peppers, salami, and olives. Easy appetizer for holidays and parties.


Ingredients

Cheese Log:

  • 500g / 1 lb cream cheese, softened
  • 1/3 cup sour cream
  • 1/2 tsp EACH thyme, oregano, basil, rosemary, black pepper OR 1 tsp Italian seasoning
  • 1 tsp EACH garlic powder, salt, red pepper/chilli flakes (adjust for heat preference)
  • 2 cups cheddar or other freshly grated cheese
  • 280g / 9 oz roasted peppers, drained and finely chopped
  • 180g / 6 oz salami, finely chopped
  • 3/4 cup green olives, finely chopped
  • 1/3 cup green onion, finely minced (34 stalks)

Topping / Serving:

  • 220g / 7 oz sun-dried tomato strips with oil, roughly chopped
  • 1/4 cup parsley, finely chopped
  • Rosemary sprigs (for decoration)
  • Crackers (Jatz or similar) for serving

Instructions

  1. Prepare the Base:
    In a large bowl, combine softened cream cheese and sour cream. Mix until smooth and creamy.
  2. Add Seasonings:
    Sprinkle in thyme, oregano, basil, rosemary, black pepper, garlic powder, salt, and chili flakes. Mix well to evenly distribute herbs and spices.
  3. Mix in Cheeses:
    Add grated cheddar cheese to the mixture and fold gently until fully incorporated.
  4. Add the Flavor Boosters:
    Fold in roasted peppers, chopped salami, olives, and green onion. Ensure all ingredients are evenly dispersed.
  5. Shape the Log:
    Transfer the mixture onto a sheet of parchment paper. Shape into a firm log by rolling and compressing the sides.
  6. Refrigerate:
    Wrap the log tightly and refrigerate for at least 4 hours or overnight to firm up and enhance flavor.
  7. Add Toppings:
    Once firm, unwrap the log and roll it in a mixture of chopped sun-dried tomatoes and parsley. Add rosemary springs on top for decoration.
  8. Serve:
    Place on a serving board and serve with crackers of your choice.

Notes

Softening the cream cheese completely ensures a smoother mixture.

For a spicier version, increase chili flakes or add diced spicy salami.

Use high-quality cured salami for the best flavor payoff.
